I have always been the kind of person who enjoys simple but beautiful things. It doesn't have to be fancy or expensive to be good and this translate to food. Sure I love an amazing modena balsamic vinegar and pink Himalayan sea salt (both of which are regulars in my pantry) But I'm equally as happy with a tin of tomato soup and a grilled cheese sandwich. And I have to agree with Nigella when she says there's nothing more perfect than a boiled egg.
I'm thinking of simplicity lately because being home with a newborn more or less forces me to pare down my choices. A good day comprises of getting a shower, putting on real pants (not just pjs or yoga wear) and actually eating with two hands using a knife and fork. Most days, I have to be satisfied with items I can eat one-handed while holding baby. So appreciating the simple beauty of certain foods is important - especially right now. Today my food of choice was a lovely toasted bagel with a slice of tomato, jarlsberg cheese, and some freshly sliced deli black forest ham. It was glorious. And I was just as in love with my glass of Diet Coke with lots of ice.
It's times when you're really busy that it's important to know yourself and what you like. It may seem like it's about survival but it's also about sanity. I know many would succumb to eating a microwavable meal over the sink in hectic times. But if this is your only option, at least make sure it's semi-nutritious and a meal you will enjoy.
Try not to make things too serious or difficult and accept the situation. A fussy menu is just not in the plans right now so I'm surrendering to re-heating leftovers (like Mom's lasagna which lasted us a week!), easy meals like sandwiches, and lots of snacks which we have stocked in the pantry and fridge (almonds, yogurt, or cheese are my favorites right now). Food is fuel and new moms (and other busy people) surely need their fuel. But it also helps to take pleasure in what you eat. It definitely makes the day's tasks easier to tackle! And if you really need a jolt of gourmet, go ahead and dip those apple or pear slices into some balsamic vinegar. Whatever works!

Simple salmon supper
It seems life has been increasingly hectic lately. And when you're in a rush or swamped it's easy to forget your diet and health...and trust me that's the last thing you need! So here is a simple and easy meal idea you can whip up on a weeknight in between work, the gym, more work, volunteering, friends, the Internet and feeding the cat. Oh yea, and sleep. It's a basic salad and pan-seared salmon. Good food need not be intimidating!Salmon is packed with good-for-you stuff and it's one of the fastest meats to prepare. What I tend to do the most is take a salmon fillet (I like tail pieces but you can use a steak), season it, and put it in a hot pan for a couple minutes a side. this time around I used my fail safe salt, pepper, and chicken spice rub. You can also use fresh herbs like dill or coriander, lemon pepper, or some maple syrup for some sweetness. For a 1 1/2 inch piece, cook the fish for about 6-8 minutes a side.
While the salmon is cooking, throw together a side salad with whatever you have on hand. Literally. Use anything! Lettuce, tomato and carrot are pretty common but feel free to throw in corn, raisins, spinach, almonds or fruit. It's all good for you and will probably marry pretty well on your plate.
Another thing I really love to do is make my own salad dressing. My basic recipe is two parts oil (usually olive) to one part vinegar (usually balsamic). Add in salt, pepper, whatever herbs you want and a little mustard to help it bind together. It's a tangy dressing that can be customized depending on what herbs, spices or type of mustard you have on hand.
The whole meal takes just over 15 minutes to put together and you have the peace of mind that it's good for you. So even if you're still stressed out from work, kids, or life you can rest assured you're body is well fueled. Of course a healthy glass of vino may help the situation too!

Carb-alicious
Living next to a bakery can be harmful for one's health. But it's awesome for one's snacking. Here is a quick, but decadent, snack I love to whip up when I'm in the mood for a carbalicious treat.
Take one awesome baguette.

Pour out some quality olive oil and balsamic vinegar.
